The artichoke (Cynara scolymus) is mainly cultivated in Mediterranean regions and in areas that enjoy a mild climate. Its use dates back over two thousand years.
These plants were already considered by the ancients as a significant food, and recommended especially with cilantro, wine, olive oil, etc. It is a large thistle as indicated by the Arabic roots of the name "splinter" of land.
