Pickled Carrots (carrot asaara)
A tribute to my Maldivian grandmother
What's Asaara?
Commonly referred to as 'achar' or south asian pickle, but we call it 'asaara' in my native language. It's the perfect condiment to elevate any mundane dish, with its perfect blend of sweet, spicy, tanginess. There's perhaps a handful of ways to make it.
When Ramadan approaches, my grandmother often makes her infamous
carrot-date asaara, dividing the batch into glass jars to be sent to all her daughters',
sons' and grandchildren's homes. A jar of love I like to call it :)

When you're a homesick student, is there anything more reminiscent of home than food?
