INGREDIENTS
* Penne Pasta 1 Box
* Pasta Water (save about 1/4 Cup)
* 2 Chicken Breasts
* 2/3 Cup of Sun-Dried Tomato
* 3 Table spoons of Olive Oil
* 1/2 Tea spoon of Salt
* 1/2 Tea spoon of Pepper
* 1 Whole Red Onion
* 3 Cloves of Garlic
* 1 Table spoon of Dried Basil or 3 table spoons of Fresh Basil Chopped
* 1/2 a Fresh Whole Lemon
* 1/3 Cup of Parmesan Cheese
* Pasta Water (save about 1/4 Cup)

DIRECTIONS
1. Start your water on a high heat. Heat 2 table spoons of Olive Oil on a medium heat in a medium pan to cook your chicken & fixins.
2. Take 2 chicken breasts. Cut them into cubes. Add Chicken to the pan with the Olive Oil and cook through. Salt & pepper the chicken and stir.
3. While this is cooking through, chop 1 whole red Onion. Add the onion into the pan and mince 3 cloves of garlic. Add them into the pan with the chicken along with the 1 remaining table spoon of olive oil.
4. Add the Basil and Sun-dried Tomatoes. While all this is happening the pasta should be ready to add into the boiling water. Don’t overcook the pasta. If you are using homemade pasta, I would recommend to cook Aldente.
5. Stir in the chicken and sauce to the pasta. Add 1/3 Cup of Parmesan squeeze in 1/2 a lemon full of juice. You can add more lemon if you like. Serve!
