Der erste Tag in der Küche des Restaurant Astrid y Gastón ist endlich gekommen. Nach der morgendlichen Stärkung im Hotel machten wir uns zum Treffpunkt. Wir wurden von der Security empfangen, die uns dann sogleich zur Reservierungsabteilung des Hauses brachte. Dort wird neben den Gästeanfragen alles organisatorische geregelt. So auch die Aufnahme neuer Mitarbeiter, wie es Falko hier für drei ganze Tage sein wird.
Denn im Rahmen seiner Vorbereitung für den “S.Pellegrino Young Chef Award 2018” wurde für ihn ein solches Arbeiten organisiert und überhaupt möglich gemacht. Es ist 10 Uhr morgens als wir einkehren. Gleich zu Beginn wird klar, dass man hier nichts dem Zufall überlässt.
