Home Made Macaroni and Cheese

This Monday after doing math for hours I was ready to eat my dinner. My mom had prepared some macaroni for dinner however I wasn't feeling like the normal pasta dish  with store bought sauce and Parmesan. I was feeling more in the mood for making macaroni and cheese. So I got my ingredients together and got to making a homemade cheese sauce.

There was a small list of ingredients and it was relatively easy to make. I got started by melting butter in a pan then adding in milk and flour until thick. Then I added  cheddar cheese but any cheese works. When the sauce was done I immediately transferred it onto the macaroni.
Note: I would recommend pouring the cooked macaroni into the pan with the warm sauce and tossing the mixture around

When I poured the sauce on the macaroni instead( instead of putting the macaroni in the pan ) the sauce got cooler in temperature, as I was cleaning the dishes.
After the sauce was combined with the macaroni I added in salt, pepper and steak seasoning. These spices helped to add a mild sweetness to the dish. If you are not a fan of steak seasoning however, and seasoning works. You could add basil, parsley, paprika, the list goes on.
Ingredients

1/2 cup (2.5oz)macaroni*
1 tablespoon salted butter
1 tablespoon all-purpose flour
1/2 cup milk any percentage
1/2 cup (2oz) cheese of your choice
Salt and pepper
Steak seasoning

Instructions

Bring a small pot of lightly salted water to boil over high heat.
While your water heats, shred cheese, measure out the rest of your ingredients.
Cook macaroni according to the instructions on the box.
While your pasta cooks, in a small saucepan, melt butter over medium heat. Whisk in flour and cook until a thick paste forms and turns golden, about 30 seconds to 1 minute. Slowly whisk in milk, whisking out any lumps as they form. Cook, whisking constantly until mixture thickens and begins to bubble around the edges, 2 to 5 minutes.
Remove from heat and stir in cheese until completely melted. Add salt and pepper to taste, remembering that the pasta will cut the level of spice once added. If you like nutmeg and cayenne (I do!), start with a sprinkle, taste, and work your way up. A little of both goes a long way!
Once pasta is cooked, drain and stir in cheese sauce. Serve immediately and enjoy!
